Prezadas amigas, achei tão bonitinha essa sobremesa, que resolvi testar.Olhe o que descobri sobre crumble: "Segundo a revista alemã Essen & Trinken, o crumble nasceu na Inglaterra durante a Segunda Guerra Mundial. Farinha, açúcar e manteiga eram escassas durante o conflito, e, por isso, surgiu a ideia de abandonar a base da torta e a massa do bolo e cobrir a fruta quente apenas com uma farofa" informação do blog Dolcissima Vita. Gosto  muito de tortinhas com crumble e esta me pegou pela beleza e pela facilidade de fazer. Achei aqui.

Ingredientes:

400g morangos frescos, cortado em cubos
40 g Granulado de açúcar
4g  de Agar agar

 Crumble
85 g de manteiga
75 g de Amêndoa em pó 75g
 75g de açúcar granulado
 75g de farinha de trigo
 Uma pitada de sal
Cobertura
chantilly De creme de leite 150g
 15g de açúcar de confeiteiro

Modo de fazer:

 Pré-aqueci o forno a 180 ° C e Forrei a assadeira com papel manteiga.
1.  Misturei o sal, o açúcar, a amêndoa  em pó e a farinha de trigo numa tigela.
2.  Coloquei a manteiga na tigela, usei as pontas dos dedos para misturar todos os ingredientes até formar migalhas.
3. Pressionei a massa até que a massa estivesse completamente homogenea.
4. Pressionei no sobre o papel manteiga na assadeira preparada.
5.  Levei ao forno por 15 minutos e retirei a assadeira do forno e esfarelei a mistura  em pequenos pedaços ,com dois garfos e reduzi a temperatura para 150 ° C.
6. Assei por 20 minutos ou até dourar.
7. Deixei esfriar.
8. Pressionei o crumble formado nas forminhas

Recheio:

1. Coloquei o morango, o açúcar eo agar agar para a panela e deixei ferver em fogo bem baixo.
2. Deixei esfriar à temperatura abiente

Montagem

 1. Antes que a geléia de morango endurecesse coloquei em cima do crumble e coloquei na geladeira por no mínimo 4 horas (as inhas ficaram e um dia para o outro)

2. Como o acabamento nào ficou retinho como no original, fiz mais um pouco de  geléia utilizando 200g de morangos e 2 g de agar agar  e um pouco de açucar ecoloquei por cima das barrinhas já montadas complementando a forminha a fim de que  ficassem comm a aparência bem retinha.

3.  Pouco antes de servir, bati o creme de leite freco em chantilly com o açúcar de confeiteiro até pico suave C
4. Decorei com o chantilly, algumas sementes de romã e hortelã miúdo.


14 oz fresh strawberries, diced
2 oz  granulated sugar
0,14 oz  Agar agar

Crumble
3 oz  unsalted butter
3oz almond powder
3 oz granulated sugar
3 oz all purpose flour
Pinch of salt

whipped cream
5,3 oz  whipping cream
1/2 oz  Icing sugar

How to make

Preheat the oven to 356°F and line the baking sheet with baking paper.
1. Mix together the salt, the sugar, the almond powder and the all purpose flour in a bowl.
2.Put the butter into the bowl, use your finger tips to mix all the ingredients together until crumbs formed.
3.Press the dough until the dough is fully combine.
4. Press the dough onto the prepared baking sheet.
5.Bake for 15 minutes then remove the baking sheet from the oven and lower the temperature to 300°F, use two fork to crumble the dough into small pieces.
6.Bake for 20 minutes or until golden brown. Let the crumble cool complete. Line baking sheet with baking paper, place rectangular molds over the baking paper.
7. After the crumble cool, press into the molds.

Filling

1.Put the strawberry, the sugar, and the agar agar into a saucepan, and bring to boil over low heat.

Assembly:

1.divide into the prepared molds, press to smooth the top.
2.Let them cool to room temperature then refrigerate at least 4 hours before serving.
PS.For a better finish make some more jam using 7 oz strawberries and 2 g  agar agar and a little sugar and place on top of the bars already mounted and refrigerate until firm.


 Just before serving, whip the whipping cream with the icing sugar until soft peak formed. Decorate with the whipped cream, pomegranate seeds and mint leaves , before serving.

Barrinhas de Morango com Crumble ("farofinha crocrante doce") / Strawberry crumble bars



Gente, que bolo gostoso!!! mas o mais gostoso ainda é a cobertura com a água de flores que trouxe do Marrocos! há tempos  procurava o que fazer com ela.além dos doces árabes, e me aparece essa receita daqui do blog da Rita. Apaixonada !!! já fiz duas vezes em pouco tempo...


Ingredientes
Bolo
 170 g de manteiga em temperatura ambiente
3 xícaras (chá) de açúcar
6 ovos
1 xícara (chá) de suco de laranja
¾ de xícara (chá) de iogurte natural
1 colher (sopa) de licor de laranja
3 xícaras (chá) de farinha de trigo
1 colher (chá) de fermento
1 colher (chá) de sal
1 colher (sopa) de raspas de laranja-baía
1 colher (chá) de extrato de baunilha
Modo de fazer

1. Preaqueci o forno a 180 °C . Untei com manteiga e polvilhei com farinha de trigo uma assadeira para bolo inglês de cerca de 30 cm de comprimento.
 2. Peneirei a farinha de trigo e o açúcar separadamente.
 3. Misturei em outra tigela o iogurte, o suco de laranja, o licor e o extrato de baunilha.
 3. Na batedeira, juntei a manteiga e o açúcar peneirado e bati até virar um creme fofo e esbranquiçado.
 4. Acrescentei os ovos, um a um, batendo sempre.
 5. Adicionei a farinha peneirada e a mistura de iogurte e suco alternadamente, até formar uma massa lisa e em seguida, junte o fermento e o sal.
 6. Desliguei a batedeira e acrescentei as raspas de laranja e misturei bem.
 7. Coloquei a massa na a forma preparada e levei ao forno preaquecido para assar por cerca de 50  obs:Para verificar o ponto, espete um palito na massa. Se sair limpo, está pronto
 8. Retiriei do forno e deixei o bolo esfriar por 15 minutos, antes de desenformar.
(Deixei esfriar completamente antes de cobrir com o glacê). Esperei secar por 1 hora antes de servir

Ingredientes
Glacê
 1 xícara (chá) de açúcar de confeiteiro
 2 colheres (sopa) de suco de laranja
 1 colher (sopa) de água de flor de laranjeira raspas de laranja a gosto
 Modo de Fazer
1.  Somente na hora de espalhar o glacê, misture o açúcar de confeiteiro, o suco de laranja e a água de flor de laranjeira numa tigelinha.
2.Regue sobre o bolo e espere secar por 1 hora antes de servir.
Decore com as raspas de laranja.

Orange Cake With Orange Flower Water

Ingredientes:
Cake

6 oz(170 g) unsalted butter, room temperature
3 cups (266g) granulated sugar
6 large eggs
1 cup orange juice
3/4 cups plain yogurt
1 tbsp orange liqueur
3 cups (420g) all purpose flour
1 teaspoon baking powder
1 teaspoon salt finely grated zest of 2 oranges –
 1 ½ teaspoons vanilla extract

 Glaze:
 1 ½ cups (210g) icing sugar
2-3 tablespoons orange juice
 1 tbs of orange flower water
grated zest of 2 oranges (or to taste)

 Making the cake
 1. preheat the oven to 180°C/350°F. Butter and flour a metal baking pan,20x30cm (8x12in) ( or Bread pan 30 cm)
 2. Sift flour, and baking powder into a medium bowl.
 3. Using electric mixer, beat the sugar and butter in large bowl until blended and smooth.
4. Beat in the eggs, one at a time, then orange zest and vanilla extract.
5.Mix in flour mixture in 4 additions alternately with yogurt in 3 additions.
6. Mix in orange juice. Spread the batter in the prepared pan and smooth the top.
7.Bake cake 50-60 minutes or until risen and golden and a skewer inserted in the center of the cake comes out clean.
8.Cool completely in the pan over a wire rack.

Making the icing:
 1.Only time to spread the icing, mix the icing sugar, orange juice and orange blossom water in a small bowl.
2.Drizzle over the cake and allow to dry for 1 hour before serving. Garnish with orange zest.


Bolo de Laranja Perfumadíssimo com Agua de Flor de Laranjeira / Orange Cake with Orange flower water


Hummm... esse manjar tem gosto de infância! quiçá por isso eu o considere tão especial, aliás não somente eu mas  minha mãe e tias.... Faço há muito tempo, mas finalmente resolvi postar aqui. Achei neste blog.

Ingredientes:

Creme Branco
500ml de leite de vaca
4 colheres de sopa bem  cheias de amido de milho
4 col de sopa de açúcar  (mas pode ser a gosto)
1 xícara de leite de coco

 Creme Escuro
500ml de leite
3 colheres  de sopa (bem cheias) de cacau
3 colheres de sopa (bem cheias) de amido de milho
3 col de sopa de açucar (bem cheias) ou à gosto
1/4 de xícara de creme de leite
Modo de fazer:

1. Bati no liquidificador todos os ingredientes do creme branco e levei ao fogo até engrossar e ferver , mexendo sempre
2. Untei a forma co óleo sem cheiro e coloquei o primeiro creme (poderia ser qualquer um dos dois)
3 Repeti o mesmo processo com o creme escuro e coloquei por cima do creme branco
Obs.: use sua imaginação, podem ser intercalados,  colocar em taças, etc.
 4. Cobri com filme plástico e levei à geladeira até que estivesse firme.
Desenformei e servi acompanhado de ameixas em calda.










English Version

Hmmm ... this flan tastes like childhood! perhaps that is why I consider it so special, in fact not only me, but my mother and aunts .... I make long, but finally decided to post here. I found in   this blog.

Ingredients:
White cream
500 ml of milk
4 tblsp corn starch
4 tbsp sugar
1 cup coconut milk
Dark Cream

500 ml of milk
3 tblsp cocoa
 4 tblsp cornstarch
 3 tbsp sugar ( or to taste )
1/4 cup heavy cream
Preparation:
1. I Blended all ingredients for the white cream together and boil it until it is thickened, stirring constantly
2. I greased with non-flavored oil (canola, vegetable) oil and put the cream into the mold
3. Repeat the same process but instead using the dark cream ingredients and put it on top of the white cream (which should already be in the mold)
Note: use your imagination, this can be interleaved, put in separate bowls, etc.
4. Cover with plastic wrap and refrigerate until it is firm. Serve along side prunes in syrup.

 

Manjar bicolor /Bicolor Flan





Nada como um bolo trufado para uma chocólatra de plantão! é o caso de Gabi. Todo ano faço algo bem entupido de chocolate para ela...este ano achei esse bolo trufado e não pestanejei: é esse! muito fofinho e muito gostoso... Ela junto com amigas vieram almoçar aqui e levaram o bolo para cantar parabéns na casa de Gabi, também. Sem dúvida o melhor da vida são as pessoas.. foi muito bom tê-las aqui em minha casa. Achei a receita aqui.
 Ingredientes:
6 ovos
340 g de manteiga sem sal em temperatura ambiente
400 g de açúcar
380 g de farinha com fermento
80 g de cacau em pó
6 colheres de sopa de mel claro
5 colheres de sopa de amêndoa moída (torrei amêndoas e processei
, depois penerei )
Pitada de sal refinado

Calda de cacau:
125 ml de água
1 colher de chá de cacau em pó
80 g de açúcar

 Cobertura de trufa:
400 g de chocolate preto (meio amargo)
400 ml de creme de leite fresco
1 colher de sopa de açúcar

 Preparação:

Preaqueci o forno a 180 oC e untei duas formas de 20 cm com manteiga  e salpiquei farinah e trigo (mas poderia ser chocolate ou cacau)
1. Bati a manteiga com o açúcar até obter uma mistura fofa e clara (a original não diz e é com batedeira.. eu utilizei, mas pretendo fazê-lo sem batedeira)
2. bati ligeiramente e juntei os ovos  aos poucos, mexendo sempre.
3.Juntei o mel e a amêndoa moída.
4.Juntei a farinha, o cacau e o sal peneirados juntos e mexi bem para homogeinizar.
5. Dividi a massa nas duas formas e levei ao forno cerca de 30 a 35 minutos,  (assa rapidinho, cuidado!)

Calda
1. Faça a calda juntando todos os ingredientes numa panela e deixando ferver por 5 a 7 minutos até que o líquido reduza e fique com a consistência de calda deixe fiar à temperatura ambiente para aplicar no bolo


Cobertura:
1.Levei o chocolate para derreter no microondas (mas poderia ser em banho-maria).
2.Deixei esfriar
3. Bati o creme de leite em chantili (com o açucar)
4. Adicionei o chocolate (à temperatura ambiente ) e misturei bem com o chantili

Montagem

1.Num prato de bolo coloquei um dos bolos e  furei com um palito e molhei com a calda (molhei o outro também neste momento)
2. Coloquei  um pouco da trufa entre os bolos (Convém que seja rápido porque a cobertura vai endurecer com o passar do tempo se isso acontecer, mergulhe a espátula numa taça com água bem quente )
Obs:Pode alisar todo o bolo ou deixá-lo tipo crumble no topo



Chocolate cake with truffle frosting

 Ingredients:
6 eggs
12 oz unsalted butter
13,4 oz self rising flour
14 oz caster sugar
3 1/2 oz cocoa powder
6 tbs clear honey
5 tbs ground almonds
Pinch salt

 Cocoa Syrup:
125 ml water
1 tsp cocoa powder
 3.1/2 oz caster sugar

Truffle frosting:
14 oz semi sweet chocolate
400 ml double cream
1 tbs caster sugar

H ow to make

1.Butter and line two 20 cm springform tins with baking parchment.
2.Preheat the oven to 180º
3.Beat the butter and sugar until creamy and fluffy.
4.Add beaten eggs in small parts, mixing well, then the honey and almonds, combining everything.
5. I added the sifted flour, cocoa and salt. Mix well.
6.Divide the prepared batter evenly between the two tins and bake for 30 to 35 minutes, until risen.


To make the syrup:

1. Put all the ingredients in a saucepan and boil for 5 to 7 minutes, until reduced and glossy.

Frosting:

1.In the meantime, melt the chocolate for the frosting  ( I put in a microwave)
2. Take from the stove and let it cool to room temperature.
3. Beat the cold double cream until slightly consistent and add the sugar. Keep beating until the cream is firm
4. Added the melted and cooled chocolate to the whipped cream, mixing very well

Asembly:

1. Pierce the cakes here and there with a cake tester and pour the syrup evenly.
2. Put them on a rack to cool.
3.Add the melted and cooled chocolate to the whipped cream, mixing very well.
4.Spread some of the frosting on top of the first cake and put the other one on top of it.
5.Cover the cake with the frosting.
Atention:You have to be quick because the frosting will start to harden a bit. If that happens all you have to do is dive your spatula in a bowl of hot water and keep on frosting the cake.
The warmth of the spatula will soften the frosting, making the process much easier.





Bolo trufado / Chocolate cake with truffle frosting


Deu  um pouco de trabalho..mas muito prazer A crosta é deliciosa e o recheio muito gostoso, mas  poderia ser menos cítrico. Cometi um erro na cobertura: coloquei calda de açucar queimado previamente ao invés de colocar o açucar e queimá-lo com o maçarico de cozinha  : não faça isso, coloque o açucar e queime com o maçarico! mas ficaram lindas e no final das contas gostei muito! Achei aqui.
Ingredientes:

1  1/4 xícara de creme de leite fresco
1/2  colher de sopa de suco de limão
1/3 de  xícara de chá de açúcar
1/2 xícara de manteiga, em temperatura ambiente
1.1 /4 de  xícara de farinha de trigo
1/4 de colher de chá de sal kosher
2 colheres de sopa de creme de lete fresco
1 colher de chá de essência de baunilha
100 g de manteiga sem sal
1 1/2 xícaras de açúcar granulado
1/3 xícara de suco de limão
3 ovos grandes
3 gemas de ovos grandes
2 colheres de sopa de raspas de limão fresco
3/4 xícara de mascarpone
6 colheres de sopa de creme de leite
1 1/2 xícaras de cerejas frescas (ou congeladas previamente descongeladas)
2 colheres de sopa de açúcar granulado
1 colher de sopa de suco de limão
1/2 de açúcar granulado superfino

Modo de fazer

Crosta

Preaqueça o forno a 208 C.
1. Bati na batedeira, o açúcar junto a o creme de leite fresco e a manteiga até formar um creme.
2.  Juntei a farinha, o sal kosher, mais 2 co, de creme de leite  lighte baunilha, até obter uma mistura úmida e quebradiça.
3.  Pressionei a massa em quatro forminhas de 10 cm (ou uma de 24 a 25 cm)
4. coloquei para assar por 15-20 minutos, até que a crosta estivesse bem definida e firme nas bordas.após esfriar, guardei emem recipiente  hermético até o uso.
Recheio:

1. Em uma panela misturei a manteiga, 3/4 de xícara de açúcar e suco de limão em fogo baixo, mexendo ocasionalmente, até a manteiga derreter.
2.Quando começou a ferver, retirei a panela e reservei.
3. Em uma tigela misturei os ovos inteiros, gemas e açúcar restante 3/4 xícara  de açucar restantes, até ficar  espesso e claro.
4.Adicionei à  mistura de manteiga quente  mexendo constantemente
5. Cozinhei a mistura em fogo baixo, mexendo sempre, até engrossar e quando começou a ferver peneirei a mistura por uma peneira fina em uma tigela refratária e juntei as raspas de limão misturando até esfriar completamente coloquei papel manteiga untado com manteiga e reservei na geladeira. (deixei até o dia seguinte, mas pode ser um mínimo de 8 h)
9. Em outra tigela da batedeira  bati o mascarpone e  6 col de  creme de leite até engrossar um pouco e ficar suave...
10.Misturei com 1/2 xicara daquela mistura de limão reservada(desprezei o restante) misturando  até ficar homogeneo ...
11. Coloquei  nas crostas alisando por cima

Calda
1. Juntei todos os ingredientes do molho em uma panela. Cozinhei até que a constância desejada. Polvilhei cerca de 1 colher de sopa de açúcar refinado uniformemente sobre cada torta e caramelizei com um maçarico, movendo chama uniformemente (eu não fiz isso e me arrependi, portanto faça) . Sirva com molho de cerejas sobre as tortas.

Lemon Mascarpone Brulee with Cherry Compote
 1 1/4 cups heavy cream
 1/2 tspn lemon juice
 1/3 cup sugar
1/2 cup butter, room temperature
1 1/4 cups all purpose flour
1/4 teaspoon kosher salt
2 tablespoons cream
1 teaspoon vanilla extract
1 stick unsalted butter
1 1/2 cups granulated sugar
1/3 cup fresh lemon juice
3 whole large eggs
3 large egg yolks
2 tablespoons freshly grated lemon zest
3/4 cup of  mascarpone
 6 tablespoons heavy cream
 1 1/2 cups fresh or thawed frozen cherries
2 tablespoons granulated sugar
1 tablespoon fresh lemon juice
1/2 cup superfine granulated sugar
How to make
Tart Shells

 Preheat oven to 400F
1. In a stand mixer, cream together sugar and butter until light and fluffy.
2.Beat in flour, kosher salt, cream and vanilla, until mixture is moist and crumbly.
3. Press dough into four 4-inch tart pans (or one 9 or 10 inch tart pan) and press it up the sides, making sure the layer on the bottom is even. Bake for 15-20 minutes, until crust is set and firm at the edges. Cool, and store in an airtight container until use.

 Make filling: 
1.In a heavy saucepan combine butter, 3/4 cup sugar, and lemon juice over moderately high heat, stirring occasionally until butter is melted.
2. Bring mixture to a boil, stirring, and remove pan from heat.
3. In a bowl whisk together whole eggs, yolks, and remaining 3/4 cup sugar until thick and pale. 
4.Add hot butter mixture in a stream, whisking constantly, and transfer to pan. 
5.Cook mixture over moderate heat, stirring constantly, until thick and just beginning to boil. Pour mixture through a fine sieve into a heatproof bowl and stir in zest. Cool lemon mixture completely, its surface covered with buttered wax paper, and chill at least 8 hours and up to 1 day.
6. In another bowl with an electric mixer beat together mascarpone and cream until thick and smooth. 7.Fold in 1 1/2 cups lemon mixture, reserving remainder for another use, until combined well. 
8. Divide filling among shells, smoothing tops. Chill tarts, loosely covered, at least 1 hour and up to 1 day.
 Make sauce: 
1.Throw all sauce ingredients into a sauce pan. 
2.Cook until desired constancy is reached. 
3. Sprinkle about 1 tablespoon superfine sugar evenly over each tart and caramelize with a blowtorch, moving flame evenly back and forth over sugar until melted and caramelized, about 30 seconds. Serve tarts with cherry sauce.

Mini-torta Brulé com Mascarpone e Molho de Cerejas / Lemon Mascarpone Brulee with Cherry Compote




As preferências de meu marido são sempre por salgados. Fico sempre atenta para coisinhas salgadas e sempre estou procurando novidades. Estas bolachas crackers não levam 15 minutos para ficarem prontas são gostosinhas.. acabei de fazê-las. Achei aqui.


Fiz 20 bolachinhas bem fininhas

Ingredientes:
160 g de farinha de trigo 
1 colher de chá de sal marinho - (Usei Kosher)
3 Sopa de azeite
5-6 colheres de água à temperatura ambiente (usei 2)
2 colheres de sopa de sementes de gergelim
Pimenta moída na hora 

Modo de fazer:
Preaqueça o forno a 180 °. 

 1) Em uma tigela, misturei a farinha + 1/2 colher de chá de sal do mar + 1 volta do moinho de pimenta.
2) Adicionei o óleo e misturei. Adicionei a água e misturei.
3) Adicionei as sementes de gergelim, misturei novamente. 
Obs.:A massa deve ser macia e ligeiramente pegajosa. Se estiver muito seca adicione meia colher de sopa de água. 
4 Sovei a massa por 3-5 minutos. 
5 Abri a massa em superfície enfarinhada. 
6) Dobrei ao meio aqui, distribuídos(deixei por 5 minutos)

6 Usando um pedaços pastelaria rodada (5 cm de diâmetro, para mim é o tamanho perfeito), cortar os biscoitos. Para cair como uma placa forrada com papel manteiga. 7 Prick cada biscoito com um garfo. Salpique o restante do sal do mar e dar-lhe de volta um tiro de pimenta. 8 Asse 12 minutos ou até que os biscoitos estejam dourados. Se necessário, ter um pouco de uma grade. 9 Depois de cozido, deixe-os esfriar sobre uma grade antes de servir. Eles mantêm perfeitas de 3-4 dias em uma caixa de metal hermeticamente fechado.

 7)Dobrei ao meio  (deixei por 2-3 minutos no máximo)
Obs:. É um pouco o princípio da massa folhada, mas sem manteiga. Estas dobras sucessivas vai ajudar a ter biscoitos crocantes.
 8)Usando um cortador de 5cm (usei de 6 cm) cortei os biscoitos.
Obs: Abri a massa no papel manteiga e cortei  por ima retirando os excedentes que abr novamente  em outro papel. mas você pode simplesmente colocar na forma
9) Piquei cada biscoito com um garfo. Salpiquei o restante do sal Kosher e dei-lhe outra rodada de pimenta
10) Assei por 12 minutos ou até que os biscoitos estejam dourados.
Obs: Depois de cozido, deixe-os esfriar sobre uma grade antes de servir. Elas se  mantêm perfeitas de 3-4 dias em uma caixa de metal hermeticamente fechada.

How to make

 Preheat oven to 180 °.

 2 Add the oil and mix. Add water and mix. Add the sesame seeds, mix again. The dough should be soft and slightly sticky. If it is too dry add 1/2 tbsp water.
3 Knead the dough for 3-5 minutes.
 4 Roll out dough on 5 minutes on floured surface. Fold in half here, spread over 5 minutes. Fold in half here, spread over 2 to 3 minutes maximum. It's a bit the principle of puff pastry, but no butter. These successive folds will help to have crispy crackers.
5 Using a pastry round pieces (5 cm in diameter, for me it's the perfect size), cut out the crackers. To drop as a plate lined with parchment paper.
