White Cake with White chocolate and Strawberries One more white cake for my “collection”. Bake it was literally piece of cake. I had some surprises during the process, though. The first time I baked it, the cake didn’t rise. In further attempt, I divided the batter among three pans (to make layers), spreading it evenly, and things went well, it wasn’t flat at all, on the contrary. The cake tasted great, the flavours were rich and tender, at the same time, everyone enjoyed it! I used Lene Portugal’s Yogurt Cake recipe, and Maria do Socorro’s Filling recipe. For the cake 3 large eggs 1 tsp. baking soda 2 cups Yogurt 2 cups all-purpose flour 2 cups granulated sugar 1 cup vegetable oil For the Filling evaporated milk (200g) unsalted butter (100g) sweetened condensed milk (1 can) milk cream (1 can) For the syrup coconut milk (100 mls) milk (100 mls) Make the cake Heat the oven to 180ºC. Beat the yogurt, the oil and the eggs (the wet ingredients) in a blender for five minutes. Mix the dry ingredients in a bowl. Mix the dry and the wet ingredients. Divide the batter among the pans (20 cms) and spread it evenly. Bake for 30 minutes (medium heat). Make the filling Beat the butter and the condensed milk in a mixer until the cream reaches desired consistency. Add the evaporated milk and beat just until blended. Add the cream. Make the syrup Mix the milk and the coconut milk. Assemble the Cake Brush the cake with the syrup, on both sides of it. Spread the filling over the top of each cake. Decor the cake Melt 500g of chocolate (top herald) and spread it over a texture mat. Place in the refrigerator until the chocolate cools and sets. Complete the decor with strawberries and chocolate shavings.
